Notes: Chilaquiles is a go to breakfast option for me lately if I am at a Mexican breakfast spot. Sadly, unlike good restaurant or homemade Chilaquiles, the chips are complete mush in this meal. Other than that, the ingredients rehydrated nicely and have a delicious flavor that in my opinion, like usual, could be spicier. This will be a meal I take on trail again and would be fantastic with a fried egg on top should you pack in a pan and raw eggs or would pair well on a tortilla for a Chilaquiles Breakfast Burrito. Cheers!
May the miles you hike be filled with wonder and the glasses you raise be filled with whiskey. Cheers!
